Finestra at Solaire Resort Entertainment City presented an evening filled with the finest Italian wines from the wine regions of Italy—Veneto, Sicily, and Tuscany. The wine pairing dinner uncovered the distinct flavors and cultural heritage of each region last September 25. Guests savored a 6-course menu of exquisite dishes curated by Executive Chef Andrea Spagoni.
Each wine was thoughtfully selected by Sommelier and Solaire Resort Entertainment City Director of Beverage Daniel Blais. Chef Spagoni, raised in Turin, Italy, aimed to match tasting notes with some dishes coming from the Italian regional cuisine, offering an all-new array of dishes with the Finestra flair.
The course started with citrus marinated scallops with salmon roe and red onion, a vibrant and fresh combination for the Lugana San Benedetto 2023. This wine offers appealing notes of peaches, citrus, bananas, and herbs. For the second course, Chef prepared a rich veal and tuna tartare with caramelized hazelnuts, and yellow bell pepper hollandaise. The Passopisciaro Passobianco, 2021 is an excellent complement Chardonnay to this dish as it harmonizes flavors with its ripe yellow peach, melon, and tropical fruity taste. The slow cooked grouper with radish dip and green peas is a hearty and succulent dish. It was paired with the Barbera d’Alba Superiore, 2020, a medium to full bodied red wine layered with notes of plums, cherries, and spices.
For the fourth course, guests indulged in a luxurious artisanal fregola guanciale black truffle expertly paired with a Langhe Nebbiolo, 2021, which has an aroma of red fruits and a smooth finish. This was followed by a perfectly roasted pork tenderloin with grapes and celery jam as well as balsamic jus. The Rosso di Montalcino, 2021 brings out the bold flavors of this dish because of its versatility. Lastly, for dessert, devour the luscious dark chocolate cake with figs jam and yogurt. Its velvety and decadent taste is a blissful balance to the Amarone Classico, 2018 because of its robust flavor that doesn’t overpower the palate. This created a sweet and unforgettable finale to an elegant feast.
