Japan’s celebrated culinary heritage – Hiro Premier Japanese Yakiniku, officially opens its upscale branch at the 5th level of SM Aura’s Skypark. At the heart of Hiro’s culinary promise is its exclusive partnership with Daikichi Japanese Black
Wagyu Farm, one of Japan’s first and most respected wagyu producers, which has established its name
for 400 years in the Edo era and serves the Japanese royal family. Located in the pristine Shiga
prefecture, Daikichi is deeply committed to the ethos of “raising with integrity”—prioritizing animal
welfare, sustainable practices, and a slow, careful fattening process that results in A5-grade Omi
Beef. Recognized as one of the ‘Sandai Wagyū’ or Japan’s ‘Three Great Wagyu,’ Kobe, Matsusaka,
and Omi are the country’s most celebrated beef brands.
A5 is the highest possible grade for Wagyu beef in Japan, representing both the exceptional quality of
meat and remarkable marbling. It’s determined by the Japanese Meat Grading Association (JMGA)
based on two main components:
1. Yield Grade (A, B, C)
● A = Highest yield of usable meat from the carcass.
● B and C are lower yields.
2. Meat Quality Grade (1–5, 5 being the highest). This evaluates:
● Marbling (intramuscular fat)
● Meat color and brightness
● Firmness and texture
● Fat color, luster, and quality
A score of 5 means outstanding quality in all these areas. So, A5 Wagyu = Highest Yield + Top Quality.
It’s what gives beef its signature melt-in-your-mouth texture, rich umami flavor, and luxurious
marbling, often likened to edible velvet. Each cut of Hiro Premier’s A4 and A5-grade beef is flown
directly from Japan, ensuring unmatched freshness and quality. Diners are guaranteed an authentic taste of Japan’s finest.

MasterChef Shogo Izawa, a Tokyo-born, award-winning MasterChef 1 with over 40 years of
experience, leads the kitchen. He has won world cooking championships in England and Taiwan and
has worked for several international brands and events, including the GRAMMYs in the United States. “Opening our SM Aura branch is a celebration of Japanese culinary artistry,” says Izawa. “We are proud to bring the very best of Japan—from pasture to plate—right here in Manila.”
