Guerrero. Together with her daughter, TCG CEO Marinela ‘Badjie’ G. Trinidad, they came up with Sisterfields to highlight what they call “sustainable cuisine.” “There are a lot of produce in Tagaytay and around the Taal area. And it’s very family-friendly. We have the perfect farm-to-table, family restaurant for the atmosphere of this vacation hotspot,” said Badjie.
Sisterfields anchors its concept on three important tenets: farm-to-fork (organic selection of fruits and vegetables from Tagaytay); pasture-to-plate (from Batangas beef to Tagaytay tawilis) and crop-to-cup (featuring ethically produced Di Bella coffee). “We want Sisterfields to exude a family-friendly ambience. It is not too high concept or ultra-modern. Apart from freshness, diners can expect a lot of familiar flavors but done entirely in surprising renditions,” Badjie said.
Chefs from the Philippines’ top culinary school, the Center for Culinary Arts, Manila (CCA, Manila) will take turns in Sisterfields’ kitchen who will be inspired by the menu created by Chef Noel dela Rama, an acclaimed New York-based personal chef. Chef Noel earned his Culinary Arts degree at the prestigious Culinary Institute of America and holds a degree in Baking and Pastry Arts from The French Culinary Institute in Soho, New York City. Currently, he is a visiting chef-instructor at CCA, Manila. A staunch farm-to-table advocate, Chef Noel proudly brings his signature cooking style to fore through his thoughtfully-composed menu for Sisterfields. “I want to bring something new to the table. I want Sisterfields to be known for simple, well-cooked, straightforward dining,” he said.
Elevated comfort food
Sisterfields presents a whole-day dining convenience starting with a spread of hearty breakfast selections. Guests delight in breakfast staples perfect for Tagaytay mornings, such as congee, champorado and fried tawilis finished off with breakfast beverages including organic juices and artisan coffee blend, Pahimis, a popular brew in Cavite.
Those who will come over for lunch or dinner will enjoy appetizers such as Grilled Beef Summer Rolls with Peanut Sauce, Spicy Wings with Jicama and Mango with Chili-Lime Salt, Tinapa Spring Rolls with Sweet Chili Sauce, and entrees such as Grilled Tenderloin with Miso Butter and Sautéed Vegetables, Prawns with Tarragon Butter, Thin Crust Pizzas with Longganisa and Quesong Puti with Pico de Gallo; Grilled Chicken Quesadillas with Roasted Peppers and Mushrooms, Corn and Tomato Salsa, Avocado Crema, Maliputo Fillets with Manila Clams and Chorizo en Papillote, Tomato and Garlic, Asparagus; Sticky Barbeque Baby Back Ribs with Coleslaw; Cerveza Negra-Braised Boneless Beef Short Ribs with Garlic Mashed Potato, Southern Fried Chicken with Pan Gravy.
To cap your meal, enjoy the homemade ice cream in Ube Macapuno, Pineapple Taragon and Kapeng Barako flavors. Sisterfields also serves Di Bella Coffee, highlighting the restaurant’s crop-to-cup philosophy. It is the perfect place to enjoy coffee.
Beyond the table
To create a complete and unique foodie experience in Tagaytay, Sisterfields will also feature two “express” deli sections for convenient purchasing of savory products. “Sisterfields will have an Epicurious express café for dine-in and grab-and-go items for the hotel residents, and a patisserie where they can buy freshly baked breads,” said Badjie.
