Located on the 16th floor of Discovery Primea in the heart of Makati City, Flame blends modern elegance with culinary innovation. Here, contemporary sophistication meets a rich tapestry of flavors, with each dish celebrating both local and global influences.
Signature Dishes and Notable Offerings
Indulge in appetizers such as XO Oysters with melted leeks and housemade XO sauce, Duck Gyoza with foie gras and soy-rice vinegar dip, and Wagyu Nuggets featuring crispy ground wagyu, mozzarella, camembert, and Japanese curry dip. For main courses, enjoy modern Asian favorites and Flame originals like Our Kare-Kare with cashew-crusted pork hock, oxtail, grilled eggplant, French beans, and crispy banana heart and flowers, accompanied by rich peanut sauce and bagoong rice. Choose from cuts like Rib-eye, Rib Cap, Striploin, Porterhouse, and Tenderloin, or opt for pork selections such as Joselito Iberico Secreto and Bone-in Pork Tomahawk, lamb chops, and seafood options like Norwegian Salmon and Jumbo Prawns. The Josper grill imparts a unique smokiness and depth of flavor, making these steaks a highlight. Each is served with a selection of sides and sauces.

Flame’s tableside service adds a touch of theatrical flair. Witness the Tomahawk Steak being carved and served with sides like steak rice and truffle potato gratin. The Roasted Peking Duck is presented in three ways: carved Magret, deboned legs on top of XO fried rice with duck consommé, and crispy fried bones with bell peppers and garlic. The new Roasted US Beef Wellington, with mushroom duxelles, scallion crepe, puff pastry, and bordelaise sauce, offers an exquisite addition.

Executive Chef Luis J. Chikiamco, with Discovery Primea since 2014, brings a wealth of expertise to Flame. His background spans France, Mexico, and the Philippines, with training at L’Institut Paul Bocuse and experience at a three-star Michelin establishment. Chef Luis focuses on contemporary Asian cuisine, using seasonal ingredients to create memorable dishes.
